Vegetable Slice

Ingredients

  • 6 eggs, whisked
  • 750 g zucchini, grated
  • 1 medium brown onion, finely chopped
  • 1 cup Self Raising Flour
  • 1 cup grated cheddar
  • 250 ml (1 cup) Campbell’s Real Stock - Vegetable
  • 125 g cherry tomatoes, halved

Method

  1. Preheat oven to 190°C.
  2. Grease a 20 cm x 30 cm oven-proof dish.
  3. In a large bowl combine grated zucchini (squeezed and drained), onion, flour, cheddar and Campbell’s Real Stock - Vegetable.
  4. Stir well to combine, pour into the baking dish. Top with tomato (cut side up).
  5. Bake for approximately 45 minutes or until cooked through.
  6. Serve with green salad.
