Saucy Chicken Nachos

  • 1 tbsp oil
  • 2 chicken breast fillets, diced
  • 1 onion, finely chopped
  • 2 cloves garlic, crushed
  • 1 tbsp chopped jalapeno chillies or
    other mild chillies (optional)
  • 1 tsp ground cumin
  • 150g baby spinach, shredded 
  • 1 x 420g can Campbell's Condensed Cream of Chicken Soup
  • 1/3 cup light sour cream
  • 1 x 230g packet CC's corn chips
    (Nachos or Tasty Cheese flavour)
  • 1 cup grated cheddar cheese
  • ½ tsp ground paprika


  1. Preheat oven to 200°C.

  2. Heat oil in a large frying pan. Cook chicken until golden. Add the onion and cook until soft. Add the garlic, chillies and cumin and cook 1 minute.

  3. Add the spinach, soup and sour cream and cook for 10 minutes.

  4. Scatter half the corn chips on an ovenproof dish or plate. Top with half the chicken mixture. Top with remaining corn chips and chicken then finally sprinkle over the cheese then paprika.

  5. Bake for 10 minutes or until cheese is golden. Serve with a fresh green salad.
