Real Coq Au Vin

  • 3 tbsp oil
  • 4 slices bacon, roughly chopped
  • 1/2 cup flour
  • 4 chicken marylands or 8 chicken drumsticks
  • 2 medium onions, sliced
  • 2 cloves garlic, minced
  • 1 cup button mushrooms, sliced
  • 2 carrots, sliced
  • 5 sprigs fresh thyme
  • 2 tsp fresh rosemary
  • 3 bay leaves
  • 2 cups red wine
  • 2 cups Campbell’s Real Stock – No Added Salt Chicken


  1. Preheat the oven to 180 degrees. Heat a medium sized heavy based casserole pot, add 1 tbsp of oil and fry the bacon over medium heat until crisp. Transfer bacon to paper towel.

  2. Coat chicken pieces in flour. Add the remaining oil to the pot, add chicken and cook until browned, then add onions & garlic. Sauté for 1 minute. Add the rest of the ingredients and bring to the boil.

  3. Cover with lid and place into the oven for one hour.

  4. Season to taste, then serve Real Coq Au Vin with crusty bread or mash potato cooked with stock.
