Pulled Chicken Sliders with Coleslaw

  • 1 tbsp olive oil
  • 1 small brown onion, finely diced
  • 1 tsp ground cumin
  • ¼ - ½ tsp chilli powder depending on personal taste
  • 2 boneless, skinless chicken breast (500g)
  • 1 x 400g can diced tomatoes
  • 1 cup (250ml) Campbell’s Real Stock – Chicken
  • 1 pkt 300g coleslaw
  • 1/3 cup mayonnaise
  • 1 tbsp lime juice
  • 8 soft dinner rolls or sliders


  1. Heat a medium saucepan with a lid and add oil, then add onion, cumin and chilli. Cook for 2-3 mins until onion softens, stirring regularly.

  2. Add chicken, tomatoes, Campbell’s Real Stock and bring to the boil. Return to a simmer, cover and cook for 15 minutes or until chicken is cooked through.

  3. Remove chicken from pan and set aside. While chicken cools bring the sauce to a simmer, uncovered to reduce sauce by half.

  4. Shred chicken with two forks. Stir chicken back into sauce and heat through.

  5. To prepare coleslaw place coleslaw mix, mayonnaise and lime juice in a medium bowl. Stir well to combine. Season both chicken and coleslaw to taste.

  6. To serve place chicken mix then coleslaw on dinner roll.
