Heat a medium saucepan with a lid and add oil, then add onion, cumin and chilli. Cook for 2-3 mins until onion softens, stirring regularly.
Add chicken, tomatoes, Campbell’s Real Stock and bring to the boil. Return to a simmer, cover and cook for 15 minutes or until chicken is cooked through.
Remove chicken from pan and set aside. While chicken cools bring the sauce to a simmer, uncovered to reduce sauce by half.
Shred chicken with two forks. Stir chicken back into sauce and heat through.
To prepare coleslaw place coleslaw mix, mayonnaise and lime juice in a medium bowl. Stir well to combine. Season both chicken and coleslaw to taste.
To serve place chicken mix then coleslaw on dinner roll.
