Pork Cutlets with Minestrone Sauce

  • 6 x 280g pork cutlets
  • 3 tsp mild English mustard
  • 2 tbsp oregano, chopped
  • For the Minestrone Sauce:
  • 1L Campbell's Real Stock - Reduced Salt Beef
  • 2 cups tomatoes, diced
  • 50ml olive oil
  • 1 large brown onion, diced
  • 1 cup carrot, diced
  • 1 cup zucchini, diced
  • 1 cup cannellini beans
  • 2 cloves garlic, crushed
  • 2 tbsp tomato paste


  1. For the Minestrone Sauce:

  2. In a large pot, reduce the Campbell's Real Stock and the diced tomatoes by half.

  3. Heat the oil in a pan and sauté the onions, garlic, carrots, cannellini beans and zucchinis for 5 minutes, then add to the sauce also adding the tomato paste and simmer slowly until vegetables are tender and sauce has thickened.

  4. For the Pork Cutlets:

  5. Mix together the oregano and mustard.

  6. Rub both sides of the pork cutlet with the mustard mix and char grill for 5-7 minutes each side, depending on the thickness of the cutlet.

  7. Serve the pork cutlets on top of the minestrone sauce.
