For the Minestrone Sauce:
In a large pot, reduce the Campbell's Real Stock and the diced tomatoes by half.
Heat the oil in a pan and sauté the onions, garlic, carrots, cannellini beans and zucchinis for 5 minutes, then add to the sauce also adding the tomato paste and simmer slowly until vegetables are tender and sauce has thickened.
For the Pork Cutlets:
Mix together the oregano and mustard.
Rub both sides of the pork cutlet with the mustard mix and char grill for 5-7 minutes each side, depending on the thickness of the cutlet.
Serve the pork cutlets on top of the minestrone sauce.
