One Pot Rice with Broccoli & Cherry Tomatoes

Ingredients

  • 1 tbsp olive oil
  • 2 leeks, thinly sliced
  • 2 cups Basmati rice
  • 1L Campbell’s Real Stock – Salt Reduced Vegetable
  • 2 zucchini, grated
  • 2 cups broccoli, finely chopped
  • 250g punnet cherry tomatoes, halved
  • ½ cup basil leaves

Method

  1. Heat oil in a large saucepan and cook leeks until tender. Add rice and

  2. Campbell’s Real Stock and bring to the boil. Cook, covered, for 10 minutes.

  3. Stir in zucchini, broccoli and tomatoes, recover and allow to stand 5 minutes.

  4. Serve immediately sprinkled with basil leaves.
