Mussels Mariniere

  • 60ml olive oil
  • 2 tsp garlic, crushed
  • 2 brown onions, sliced
  • 250ml white wine
  • 375ml Campbell's Real Stock - Fish
  • ½ cup cream
  • 1.5kg fresh mussels
  • 6 tsp parsley, chopped
  • Salt and pepper


  1. In a large pot, add oil and cook onions and garlic until translucent. Add the white wine and Campbell's Real Stock. Bring to the boil.

  2. Add the mussels and cook covered, for 2 minutes, then stir.

  3. Cook covered for a further 3-4 minutes. Once the mussels have opened, remove from heat, add cream and sprinkle with parsley. Season well with salt and pepper. Serve.
