Mediterranean Honey Lemon Chicken

  • 1 tbsp olive oil
  • 4 chicken breast fillets
  • 1L Campbell's Real Stock - Chicken
  • 2 tbsp honey
  • 1 lemon, rind and juice of
  • 1 tbsp chopped sage, either fresh or dried
  • 1/4 cup green olives, pitted
  • 2 zucchini, sliced
  • 1 1/2 cups couscous


  1. Heat oil in a large frying pan and cook chicken until golden brown on all sides.

  2. Add Campbell's Real Stock, honey, lemon rind and juice, sage and olives.

  3. Bring to the boil, reduce heat and simmer, gently, partially covered for 15 minutes or until chicken is cooked through.

  4. Add zucchini and couscous, stir well, cover and cook for 5 minutes or until couscous is tender and stock is abosrbed. Serve couscous on a plate and top with the chicken.

  5. Note: For variation add sun-dried tomtoes or black olives with the zucchini in the recipe.
