Lighter Carbonara

Ingredients

  • 1 tbsp olive oil
  • 80g eye bacon, sliced thinly
  • 1 cup mushrooms, sliced
  • 1 cup Campbell’s Real Stock – Chicken
  • 200g fettucini
  • 1 egg yolk
  • 20mls light thickened cream
  • 1⁄4 cup flat-leaf parsley, finely chopped, plus extra to serve
  • 3⁄4 cup grated parmesan, plus extra to serve (*Optional. Don’t add for a lighter option)

Method

  1. In a fry pan, heat oil, then sauté bacon & mushrooms for 4 mins, add stock & cook for 10 mins.

  2. Cook pasta (to packet instructions).

  3. Lightly whisk egg yolk & cream in a bowl.

  4. Toss all ingredients together & serve.

  5. *NOTE: this recipe is lighter by swapping 1 cup of cream for 1 cup of stock.
