Hearty Beef Minestrone

  • 1 tbsp oil
  • 250g beef mince
  • 1 clove garlic, crushed
  • 2 rashers bacon, chopped
  • 2 tbsp tomato paste (with no added salt)
  • 1L Campbellā€™s Real Stock - Salt Reduced Beef
  • 2 sticks celery, diced
  • 2 carrots, diced
  • 2 potatoes, diced
  • 2 zucchini, diced
  • 1 cup small shell pasta
  • 400g can borlotti beans, rinsed and drained


  1. Combine mince and garlic, roll into small balls.

  2. Heat oil in a saucepan over medium-high heat. Cook meatballs until browned on all sides. Add garlic and bacon, cook for 1 minute.

  3. Add Campbell's Real Stock and bring to the boil. Stir in tomato paste, celery, carrots and potatoes. Cook for 5 minutes.

  4. Add zucchini and pasta. Cook for 10 minutes or until pasta is just cooked. Stir in borlotti beans and cook until heated through.
