French Chicken & Chorizo Cassoulet

Ingredients

  • 2 tbsp olive oil
  • 1 brown onion, diced
  • 2 cloves garlic, crushed
  • 1 tbsp oregano, finely chopped
  • 1 tsp rosemary, finely chopped
  • 1 bay leaf
  • 1 large carrot, diced
  • 1 x 400g can crushed tomatoes
  • 1 x 400g can cannellini beans, drained
  • 600g chicken thigh, diced
  • 2 chorizo, halved and sliced
  • 500ml Campbell's Real Stock - Chicken
  • 2 tbsp tomato paste
  • Basil leaves, to garnish
  • Crusty bread, to serve

Method

  1. Heat oil in a large saucepan, add onion, garlic, oregano, rosemary, bay leaf and carrot, cook for 3 minutes or until onion is softened.

  2. Add the chicken and chorizo and cook for a further 10 minutes or until chicken is browned. Add tomato paste, Campbell's Real Stock, tomatoes and cannellini beans, cook for a further 10-15 minutes or until thickened.

  3. Garnish with shredded basil leaves before serving.

  4. Serve with crusty bread.
