Beef Nachoes

  • 1 tbs olive oil
  • 1 large brown onion, finely diced.
  • 2 cloves garlic, crushed
  • 1 kg beef mince
  • 2 tsp Mexican chilli powder
  • 2 tsp cumin powder
  • 2 tbs tomato paste
  • 500 ml (2 cups) Campbell’s Real Stock – Beef
  • Serve with corn chips, grated cheese and coriander


  1. Heat a large frying pan. Add oil, onion and garlic and cook for 1 minute.  Add mince and cook for 10 minutes or until mince starts to brown.
  2. Add chilli powder, cumin, tomato paste and Campbell’s Real Stock – Beef bring to the boil, reduce heat to low and simmer for 15-20 minutes, or until liquid is almost absorbed.
  3. Serve on a bed of corn chips topped with grated cheese and coriander.
