Beef, Kumara & Mushroom Cottage Pie

Ingredients

  • 1 kg kumara, peeled and chopped
  • 1 tbsp olive oil
  • 1 brown onion, chopped
  • 2 cloves garlic, crushed
  • 200 g button mushrooms, sliced
  • 700 g beef mince
  • 1 ½ cups frozen peas
  • 420 g can Campbell’s Cream of Mushroom Condensed Soup
  • 2 tbsp butter
  • 1 cup grated tasty cheese

Method

  1. Preheat oven to 180°C.
  2. Bring kumara to the boil, reduce heat & simmer for 10 - 15 mins, until soft.
  3. Meanwhile heat oil in a frying pan. Cook onion and garlic for 1 - 2 mins. Add mushrooms, cook for 2 - 3 mins until softened.
  4. Add mince to frypan, cook for 5 - 8 mins until browned. Stir in peas and Campbell’s Cream of Mushroom Condensed Soup. Simmer for 2 - 3 mins. Spoon into a 2.5 litre (10 cup) capacity baking dish.
  5. Drain kumara, mash, then add butter. Stir until smooth & creamy. Spread over meat mixture. Top with cheese & bake for 20 mins or until golden brown.
